On Quesadlillas

I’ve learned something about making quesadillas, thanks to Ethan Chlebowski’s video comparing getting Chipotle quesadillas to making virtually the same thing at home. Ethan points out Chipotle folds their quesadillas in a square, as opposed to a half circle or full circle. The result is a fully controllable situation as you can dip these in whatever condiments you have without losing the filling everywhere, as this creates a pocket instead of an open-ended slab.

I tried this out this morning while making a breakfast quesadillas and I was able to make it more filling than I normally would have. It’s a bit of a game changer for me.
